It’s creamy, with just the right balance of fat, salt, and sweet flavors. This raw whole food plant-based salad dressing will liven up any salad and is great for any time of the year.
Why homemade salad dressing?
Honestly? It’s just better all around! There are chemicals and preservatives in store-bought dressings that are not the best for our health. I focus on eating Whole Food Plant Based and avoiding oil. When creating my salad dressings, I choose what goes in them! Homemade salad dressings are fresher and more nutrient dense!

Ingredients and their health benefits:
Pistachios: Cousin of the cashew, this soft nut is dense in fiber, protein, and unsaturated fat!
Cilantro: This herb is a part of the Apiaceae family, along with parsley and fennel. Cilantro is excellent for antioxidants and encourages some to use less salt because of its added flavor. Typically, you love cilantro or hate it. Some think cilantro tastes like soap, but I’m on team cilantro. It contains vitamins C, K, and A. It also has potassium, magnesium, and folate. This powerful herb helps rid the body of heavy metals, protects against food poisoning, and helps lower blood sugar.
Garlic: It is part of the Allium family (onion family), with leeks, shallots, chives, and scallions. Garlic is aromatic and brings a warm earthy flavor to its dishes. Because of garlic’s sulfur compounds, it has been used as a medicinal plant for years. It can boost immunity, reduce blood pressure, and lower cholesterol.

How to make this easy creamy cilantro salad dressing:

Mason Jar Salad Lid
Ingredients:
1 cup of Pistachios
1 clove of Garlic
2 tablespoons of fresh lime juice
1/3 cup of packed cilantro
1 teaspoon of sea salt
1-1 1/2 cups of water, start with 1 cup and add more if you want a thinner consistency.
Preparation:
Add all of the ingredients to the blender. Blend the ingredients until the cilantro leaves completely break down. The texture should be thick but not too thick to pour. Add more water if you want a thinner consistency.
