Who doesn’t love a rainbow salad? This salad is easy to put together for a party or use it as a meal prep recipe. I love using the Green Goddess Herb Dressing. It is beautiful and full of nutrients.

Ingredients and their health benefits:
Red Pepper: Great source of Vitamin A and beta-carotene, which is important for vision.
Yellow Pepper: Full of Vitamin A, Vitamin C, and potassium.
Red Cabbage: Excellent for Vitamin K!
Cucumber: Great for hydration.

Equipment:
Ingredients:
5 – 7 cups of your favorite greens. Or until the salad bowl is 3/4 full. (I like using a mix of green.)
1/4 of a red cabbage, shredded
1 red pepper, diced
1 yellow pepper, diced
1 cucumber, diced
1/2 cup of shredded carrots
Dressing: Green Goddess Herb Salad Dressing
1/2 cup of cilantro, chopped (lightly packed)
1/2 cup of green onions, chopped (lightly packed)
Preparation:
Wash and prep all of the ingredients. Add them to a large salad bowl. Gently toss them together until the ingredients are evenly mixed. Top with the green goddess dressing, hemp seeds or other chopped nuts you prefer.

Simple Rainbow Salad – To share!
Equipment
- Large salad bowl
Ingredients
- 5 – 7 cups of your favorite greens. Or until the salad bowl is 3/4 full. I like using a mix of green.
- 1/4 of a red cabbage shredded
- 1 red pepper diced
- 1 yellow pepper diced
- 1 cucumber diced
- 1/2 cup of shredded carrots
- 1/2 cup of cilantro chopped (lightly packed)
- 1/2 cup of green onions chopped (lightly packed)
Green Goddess Salad Dressing
- 2/3 cup of green onion, chopped and packed
- 2/3 cup of dill, chopped and packed
- 2/3 cup of cilantro, chopped and packed
- 2 cups of cashews, soaked and drained
- 2 teaspoons of sea salt
- 1 cup of fresh lemon juice
- 2 cloves of garlic
- 2 cups of water
Instructions
- Wash and prep all of the ingredients. Add them to a large salad bowl. Gently toss them together until the ingredients are evenly mixed. Top with the green goddess dressing, hemp seeds or other chopped nuts you prefer.
- Add all of the ingredients to a high-speed blender and blend until smooth. Add more water or lemon juice if you desire a thinner consistency.
